    secret for now but it seems to be fitting in perfectly with the style we u2019re looking for Elqui The Syrah was harvested on time and it has just finished undergoing alcoholic fermentation We are very happy with this year u2019s Elqui grapes Choapa The lack of water ensured highly concentrated grapes which is a welcome development for the Syrah grape variety We are expecting a very good year Casablanca Something unusual happened here The Sauvignon Blanc came in very late by at least three weeks and we just started the harvest the night of April 3rd Also the clusters are heavier than usual this year Maipo The Sauvignon Blanc was harvested later than in average years and the red grape varieties give clear signs of being very late Veraison was also very late uneven and long On April 3rd we started the harvest of Merlot and Malbec Cachapoal and Maule All the grapes have already been harvested on dates similar to an average year Itata The Cinsault and Moscatel are already undergoing fermentation in terracotta amphorae In both cases the summer rains led to fairly large berries with strong acidity and freshness We are very hopeful about producing wines

    the selected amphorae were finally opened as you can see by the picture above taken on Monday September 3rd The wine was decanted without being filtered passed through a stainless steel tank and then bottled in the following days Now it is only a matter of time until the first bottles of the 2012 Viejas Tinajas Cinsault appear in stores The vineyard s winemaker Eduardo Jordán notes This wine is meeting all our expectations as it presents a strong bouquet fruity and fresh If with the first harvest of the year we were able to discover and study this wine this year we have crafted a high quality wine which will definitely surprise everyone who tastes it It is important to remember that since 2010 the De Martino family has searched the country to build their collection of 110 amphorae the capacity of which fluctuate between 60 and 1 150 liters Their shapes also differ giving a unique individuality to each wine The production process relies on minimal intervention the amphorae are filled and then left undisturbed until the alcoholic fermentation process is finished There is no application of additional elements like sulfur dioxide which is widely used in the
